Despite all of the Alabama kids going back to school this week (suckaz—NJ kids don’t go back for almost another month!), it’s still hot as balls and still summer in my eyes. And I don’t know about you, but when the heat rises, my appetite plummets. Especially after a long run or workout. It’s just too damn hot to be messing with a stove or oven when it’s 100 degrees with 100% humidity out. So I turn to light, cold dishes that make use of seasonal veggies but still keep me fueled for summer training.

Here are some of my favs:

Pretty even before they’re cooked

  • Chicken kabobs—Zack actually found this recipe, and it was delish and super easy to make! I added some grilled veggies and a salad to make it a complete meal.

Look at me all hipster drinking out of my Ball jar

  • Smoothies—After a hot run where my core temperature is 1000 degrees, the thought of hot food makes me want to vom. That’s where smoothies come in. I make mine with almond milk, Greek yogurt, fruit, flax seeds, chia seeds, honey, plant protein, and ice.

  • Rice salad—Anyone who invites me anywhere in the summer knows that this is my go-to dish. Colorful, flavorful, filling. It’s always a hit at parties!

  • Turkey burgers—Oh.Em.Gee. I don’t know if it’s the ginger, mint, or pixie dust, but this is one of my favorite meals ever. I never use a bun—it just masks the magical flavor.

  • Grilled romaine—Watch out now, I’m getting fancy. Some people find this weird, but I love the wilted/crispy/smoky flavor. Add sea salt, olive oil, blue cheese, tomatoes—BOOM, you just went gourmet.

  • California veggie sandwich—Again, it’s all about the mix of flavors. Roasted veggies are always a winner, but add the mayo and feta and you have a party in your mouth.

  • Mixed salad—I made this for a BBQ the other week and loved it. It’s just a bunch of seasonal veggies over mixed greens, but anything with “ribbons” looks like you put forth a lot of effort.
